Meal Prep Bean Salad


MEAL PREP BEAN SALAD

1 can white navy beans

1 can kidney beans

1/2 a yellow bell pepper, diced

1 cup cherry tomatoes, diced

1/4 cup diced red onions

1/4 cup fresh parsley, finely chopped

2 tbsp fresh lemon juice 

2 tbsp olive oil

Pinch of salt

DIRECTIONS

Combine all ingredients in a bowl… stir and enjoy! ✨ 

Make it extra: Serve with a few handfuls of greens, extra protein like sliced chicken or tuna and/or a sprinkle of feta cheese

Lasts for 3-4 days in the fridge 💥
