2 Minute “Busy Mom” Tuna Salad

 
 

Lunch can be tough.

When there are no leftovers in the house and I need a yummy, QUICK, protein-rich lunch, I turn to this easy 2 minute Apple Tuna Salad.  It is the best, because I almost always have the ingredients on hand. I call it a “mom” lunch because it gives me the energy I need to keep up with my kids and keeps me full for hours. Plus, it comes together in only a few minutes, so I have no excuses!

I can’t explain why the combination of apple and tuna works, but it does! Trust me and try it.

Ingredients

1 can of tuna

1/2 cup diced apple (about a handful, or two if your little ones are helping!)

1/4 cup diced red onion (or skip the onion breath by using celery! Same crunch, less stinky breath!)

3 tbsp Greek yogurt (to make it dairy-free, switch out for coconut yogurt or vegan mayo)

salt (& pepper if you like)

Directions:

  • Start with a can of tuna (drained)

  • Add a handful (or two) of diced apple

  • Top that with a dollop of greek yogurt

  • If you want a little kick, add some red onion. (If you are at work and want to save your co-workers the onion breath, celery works too!)

  • Add salt to season

  • Mix it all together.

    That’s it! The whole thing takes 2 minutes from start to finish. Now that’s healthy eating made simple!

You could serve this on toast or with crackers and veggies on the side if you wanted. Either way, it’s 10/10, and you won’t be hungry for hours! It is SO easy and weirdly satisfying.
