Easy Peasy Banana Bread

I like to bake, but I can’t say I’m a pro.
That is why I really like recipes that are SIMPLE and work every time- no messing around. So this recipe suits me perfectly. It’s basic, cozy and delicious. (I tried to make the measurements simple enough so that I could memorize them!)
Ingredients:
Wet:
5 bananas, mashed
1 egg
1 tsp vanilla
1/4 cup maple syrup
1/4 cup melted coconut oil
1/4 cup almond milk
Dry:
2 cups spelt flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp sea salt
1/2 cup chocolate chips
1/2 cup flaked coconut (walnuts or another crunchy add-in will work, too)
Directions:
Preheat oven to 350F.
Combine wet ingredients and whisk well.
Combine dry ingredients in a separate bowl.
Add dry ingredients to wet, stirring until just combined- don’t overmix!
Fold in chocolate chips and coconut and pour into a silicone loaf pan or 9x9 pan lined with parchment paper.
Bake until edges are golden brown and a toothpick comes out clean- about 50-60 minutes.
Allow to cool fully before removing from pan and cutting a slice!
