For better or for worse, LIFE HAPPENS, And sometimes cooking just isn't the priority.
That's perfectly normal and okay.
When things are stressful, we don't need the added pressure of trying to be “perfect” with our nutrition. We aren't robots.
Even so, we still need to eat. So today I'm sharing a list of 6 healthier "survival mode" meals that are not only quick and easy but also nourishing. I hope these meal ideas will help you maintain your nutrition habits with a bit more ease when life gets hard.
Rotisserie Chicken & Bagged Salad
Instead of hitting the drive-thru, head to the grocery store. I promise it will be just as quick.
2-3 Eggs, Any Way
Add a slice of sprouted bread with avocado for extra fiber, and a handful of greens for good measure. Nutritious, filling, and EASY.
Turkey Sausages with Rice & Broccoli
It's easy to find poultry sausages made with recognizable ingredients and they cook up in minutes. Add a pack of microwave brown rice and some steamed broccoli, and you've got dinner.
Chickpea Pasta Noodles with Pesto
Fiber and protein-rich noodles plus store-bought pesto equal a two-ingredient meal that is well-balanced and actually yummy.
Tuna Sandwiches
Sprouted bread, tuna with a bit of mayo, and a big handful of carrot sticks on the side. Can't go wrong.
Tetra-Pack Soup + Beans
Grab your favorite low-sodium pre-made soup (I like lentil veggie or these ones from Costco) and add a can of cannellini or black beans for extra protein and fiber.
Are these meals "perfect"? Well, maybe not. But they're simple, quick, and a lot more nourishing than frozen pizza ;)
