Cucumber Watermelon Mint Salad

When you have a lot of watermelon around, this is the perfect salad to make! Sure, you could just serve watermelon slices and be done with it- but the combo of flavours here reallllly elevates the watermelon experience, in my opinion.
Serve this alongside with a classic barbecue meal like chicken skewers and corn to balance the warm savoury dishes with some freshness. This recipe is also very hydrating- definitely a bonus on warm summer days.

Summer Cucumber Watermelon Mint Salad
1 long english cucumber
1/4 of a large watermelon (about 4 cups, when cut into small cubes)
1/4 cup fresh mint, finely chopped
1 tbsp hemp hearts
Juice of 1 lime
1 tbsp olive oil
pinch of salt
2-3 tbsp goat or sheep feta, crumbled (optional)
Directions:
Cut cucumber lengthwise and scrape out the seeds with a spoon. Discard them. Slice each half of the cucumber into thirds, then dice into cubes, about 3/4”.
Cut watermelon into 3/4” cubes.
Combine cucumber, watermelon, hemp seeds, lime juice, olive oil and salt in a large bowl.
Top with chopped mint. Add the feta cheese just before serving.
Enjoy chilled! This salad will keep in the fridge for a day or two, not more- it’s best enjoyed fresh.
