Sunshine Smoothie Popsicles
We are right in the middle of cold and flu season here in Canada so I’m pulling out all the stops to help boost my kid’s immune system - in a fun, kid-friendly way.
Not only do my kids love this easy snack, my Sunshine Smoothie Popsicles are a perfect after dinner treat for adults that want to add more veggies and protein into their diet, too. They are packed with fibre, collagen protein and antioxidants. And their vibrant colour helps bring a little brightness into these dark winter months.
Why do we love these?
Contain Vitamin C and Beta Carotene which supports the immune system
Easy and quick to make so they make a great alternative to store bought snacks (that has no added sugar!)
Supports gut health by including a variety of colours + fibre sources from plant foods, which is key for keeping our microbiome happy.
Lemon flavored Organika Collagen Protein and greek yogurt adds more protein, which means this snack won’t spike your blood sugar like a typical popsicle would.

Ingredients
2 scoops @organikahealth collagen - lemon flavoured if possible * (discount code below)
1 carrot, diced and steamed (I steam mine in the microwave with a couple tbsp of water and a plate on top- no plastic!)
1 cup pineapple (from a can, fresh, or frozen but fully thawed)
1 banana
1/2 cup full-fat greek yogurt
1 tbsp fresh lemon juice (optional - if you don’t have lemon collagen)
Directions
Place all ingredients together in a high-speed blender and blend until smooth. Pour into popsicle molds and freeze until solid.
