Sweet Potato Cinnamon Post-Workout Smoothie

Sweet Potato Cinnamon Post-Workout  Smoothie

{Original post published September 17, 2017}

This is my favourite breakfast when I'm too lazy to make actual food but I'm hungry enough to eat a whole stack of pancakes. It's *nutritionist approved* because it contains protein, healthy fats and glorious whole food carbohydrates. That means it won't spike your blood sugar like an all-fruit smoothie would- your energy will stay stable and it will keep you full for hours. It's also great pre or post-workout. Sometimes I like to drink half before the gym and half after (it's big!) Also, it tastes like dessert, so there's that. Give it a try!

In a blender, combine:
1/2 a roasted sweet potato*
2-3 dates
1 tbsp coconut butter
1/2 tsp cinnamon
2 ice cubes
1 scoop vanilla protein powder
1 cup cashew/almond milk
1/2-1 cup water to blend

Blend on high until it's nice and creamy!

*Pro-tip: Sweet potatoes are life. Thus, sweet potatoes need to be on hand 24/7. Thankfully roasted sweet potatoes are the easiest gosh darn things in the world to prep: poke 'em with a knife a few times and throw them in a 400 degree oven for an hour. I usually do this while I watch Netflix. (It makes me feel like a boss to be "meal prepping" while I watch TV.)
