Meal Prep Mediterranean Chickpea Salads

Let’s not overcomplicate things. Make some yummy salads, keep them in your fridge, eat your greens all week! I made 4 of these at once- which uses up a can of chickpeas and a whole cucumber nicely. (Work smarter, not harder, friends!)
Meal Prep Mediterranean Chickpea Salads
3 handfuls of spring mix
1/3 cup chopped cherry tomatoes
1/3 cup chopped cucumber (remove the seeds by cutting lengthwise and scooping them out before chopping)
1/4 cup parsley
1/2 cup chickpeas
Tahini lemon dressing (recipe in my dressing ebook)
Add 1/2 an avocado to serve 🥑
